It's hot...too hot to cook...or at least I have to keep it to a minimum.  Southern California only really has a couple of rough seasons...and at least to me September is the worst.  When it's hot like that big beautiful cold shrimp or prawns are a treat, and whether you make a Louie, a Mexican Cocktail, or just eat them straight it all starts the same with a good old fashioned shrimp boil.

I was grilling two kinds of shrimp in a parking lot where Jimmy Buffett was about to play.  We had goofy hats, grass skirts, coconuts, squirt guns, and al the accouterments suitable for a tropical daydream.

The secret to soup is stock.  It's the easiest thing in the world.  So here I'm doing a lemon chicken stock. What's in the pot?  Chicken Bones, carrots, onions, celery, herbs, and lemons.  I'll boil this for a few hours.  Then I'll strain out the solids, add a few tasty things like pasta and onions.  The leftover chicken will go in right before I serve.  For a more traditional flavor profile, leave out the lemons.  Stock or broth does not come in a box, can, cube, or packet of flavor.  This simple trick will change any recipe that calls for stock...and make you look like what you are a rock star chef.
